Vegan Tamale Waffles
Vegan Tamales Inspired Waffles with Black Bean Hash

Ingredients:
1½ cups of masa harina
½ cup cornmeal and ⅓ cup almond flour.
1 teaspoon of ordinary or sodium-free baking powder.
½ teaspoon sea salt.
2 teaspoons of lemon juice.
1 cup finely chopped onions
1 cup of diced red bell pepper.
1 cup fresh or frozen corn.
6 tiny garlic cloves, minced
1 15-oz. can of rinsed and drained black beans (1½ cups)
1 tablespoon of taco seasoning.
1 cup bought oil-free salsa.
1 cup guacamole.
Optional: slice jalapeno chile.
Instructions:
As directed by the manufacturer, preheat the waffle maker on the medium setting, if it is available.
Mix the first five ingredients (save the salt) in a bowl. Add 2¼ cups water and 1 tablespoon of lemon juice, and stir.
Pour ½ cup of batter into the waffle maker to bake the waffles. Shut cover; bake for five minutes. After five minutes, the waffle is done if the lid lifts easily. Cook another 30 seconds if not. Transfer the pancake to a wire rack using an acrylic spatula or wood chop stick. (Refer to the introduction advice.) Proceed with the leftover batter.
Cook for five minutes. Add more salt for seasoning.
Present the hash with heated waffles. Add salsa, guacamole, and jalapeño on top if you’d like. Serve right away.
